Alginate — polysaccharide, a viscous rubber-like substance extracted from red, brown and some green algae. Alginate has rare properties: slowly melts in water, adsorbing it hundreds of times more than its weight, forming a gel that can withstand a large range of temperature changes – freezing, thawing.
